Porc àla crème, pommes dauphinoise, mont blanc – when France reigned supreme these were the dishes I cooked for friends; rivers of cream flowed through my kitchen. Then the Italians invaded and olive oil knocked cream off its perch – sea bass and roast veg just didn’t need it. This has undoubtedly been good for our health, but cream has never disappeared from my fridge.
