I waded into the cool, crystal clear water not far from the Blue Point oyster beds and scooped up a couple of gallons in plastic jugs. I figured if the water was clean enough to produce, the bivalves we regularly eat, then it must be fine for salt (that said, I waited for a sunny stretch of days, because sewage and wastewater often flood New York’s shores after heavy rains).
